Pursuit 2 - Fish Head Curry

Fish Head Curry

Fish or if you like, Fish Head Curry

Ingredients:
1. Fishhead / Fish Steak - Spanish Mackrel
2. 3 Tahus, cut into 2 pieces

Deep fry the fish and lightly fry the tahus.

Curry:
2 onions
5 cloves of garlic
2 medium tomatos
1 teaspoon of salt
1 teaspoon of chilli powder
1 teaspoon of tumeric
2 teaspoons of fish curry
3 stalks of curry leaves
1 stalk of corriender
2.5 cups of water
5 table spoons of oil

Grate the onions, garlic and tomatoes
Fry the combination.
Add spices.
Fry till cooked
Add water. Let water boil.
Add tahus before water boils.
Once almost done, add in fish.

Can adjust spiciness by adding or reducing chilli powder. Goes well with rice.

Pursuit 2

Pine Nuts Pasta

A dry pasta with a strong hint of pine nuts. Best to use Shell pasta.

2 cups of pasta
1 medium onion
4 cloves of garlic
1 medium tomato
1 cup of pine nuts
1 tablespoon of pepper
1 teaspoon of salt
3 table spoons of tomato paste
200 grams of button mushrooms
1 carrot
10 olives
Parmesan Cheese

Prepare pasta as instructed.
Fry onions and garlic. Add in vegetables to mixture. Cook for 5 min, adding in spices. Add in nuts and pasta. Serve with parmesan cheese.

This pasta has a distinct pine nut flavour and was quite good, albiet dry.

Pursuit 2

Black Dhal (Slow Cooked)

2 cups of black lentils (Dhal)
3 cups of water
1 tea spoon of salt

Put Dhal in slow cooker. Cook for around 12 hours.
Add in dry chili 2 hours before done.

Cook turka(fried spices) seperately
1 onion
2 green chilis, cut
1 tomato
3-4 cloves of garlic
1 tablespoon of fennle seeds
1 tea spoon of salt
1 tea spoon of chili
2 table spoons of oil

Fry turka seperately and once well cooked, mix together with dhal

Advantage of slow cooking:
The 'gravy' has a stronger flavour

Char Kuey Teow

Char Kuey Teow


Ingredients:
200 grams of kuey teow mee and 150 grams of mee
3 eggs
1 medium onion
3 cloves of garlic
1 table spoon of sambal balchan
1 table spoon of dark soya sauce
4-5 xiao bai, cut into 3-4 pieces
1 pinch of salt
50g of tao gay
4 table spoons of oil

Soak noodles in water, to get rid of oily coating
Fry onions and garlic
Fry egg
Add in vegetable
Add in sambal and soya sauce
Add in tao gay
Add in noodles
Cook for around 4 minutes.

Dosa

Dosa

Soak 1 cup of Urid Lentils(Broken) and 2 cups of rice overnight
next morning, blend the mixture. Add pepper seeds and 1 teaspoon of oil to the mixture.
Leave for around 8 hours, for mixture to foam.
Beat eggs and chop onion.
Pour the mixture evenly over a pan and add the egg and onion ontop.
Let the mixture cook on one side before flipping to cook evenly on other side.

Serve with another dish, eg. masala chicken or lentils
