Pursuit 2 ~ Angel Hair Pasta with Tomatoes, Pine Nuts and Basil
This has a bit of a sour taste, but has that pasta feel.
1/4 cup extra virgin olive oil
1/2 cup pine nuts
6 garlic cloves, finely minced
3 large tomatoe schopped
20 pieces of olives
1/4 cup red wine
5 teaspoons basil
3 teaspoons chopped fresh oregano or 1/2 teaspoon dried, crumbled
1 teaspoon Salt
1 teaspoon black pepper
400g angel hair pasta, cooked according to package directions
Grated fresh Motzerella cheese
Cook pasta as instructed.
Fry pine nuts, till they turn light brown. Add in garlic and fry before adding in all the other ingredients. Let it cook for a short while before adding in the pasta. Serve with the cheese ontop.
